A quick guide to choosing the right grade, then getting the best out of it.

Choose by what you're making

To drink

Whisked bowls or premium lattes → Ceremonial / Beverage. The finest, sweetest grades.

Coffee & lattes

Café volume and iced drinks → Coffee or Café grades that hold up in milk.

Baking & sweets

Cakes, breads, confectionery → Culinary / Food. Robust and heat-stable.

Make it & keep it

Whisk a bowl

Sift ~2 g, add a little water just off the boil (~80°C), and whisk briskly in a W-motion until frothy.

Build a latte

Make a smooth paste first, then pour steamed milk. For baking, sift matcha into the dry mix so it disperses evenly.

Store it right

Keep sealed, cool, dark and dry, away from moisture and strong smells. Use opened tins within a few weeks for peak colour.

How do I judge matcha quality?

Three quick tells: colour, aroma and particle size. Higher grades are a vivid, almost electric jade — dull or yellow-green suggests older or lower-grade leaf. The aroma should be fresh and sweet rather than hay-like. And the powder should feel talc-fine, with no grit between the fingers.

Why are there different grades?

Because no single grade suits every use. Drinking grades are the sweetest and finest, but their delicacy is lost — and wasted — in a hot oven. Culinary grades are built to keep their colour and flavour through sugar, heat and dairy. Matching grade to use gives you the best result for the money.

Which matcha should I use for coffee, baking, ice cream or nutrition?

Coffee & lattes: our Coffee and Café grades, which stay bright through milk. Baking & confectionery: a Culinary / Food grade that survives the oven. Ice cream & dairy: the Gelato special-purpose grade, tuned to read true when frozen. Nutrition & functional foods: a robust, catechin-rich grade like Vitalis.

How is Japanese matcha different from other origins?

Japan's shading, steaming and stone-milling traditions — plus its prized first-flush leaf — tend to produce a brighter colour, finer texture, higher amino-acid content and lower bitterness than matcha from other origins. That consistency is a large part of why fine Japanese matcha commands a premium.

How should I store it, and how long does it last?

Matcha is sensitive to air, light, heat and moisture. Keep it sealed, cool and dark; refrigerate long-term stock in an airtight container and let it reach room temperature before opening to avoid condensation. For the best colour and aroma, use opened tins within a few weeks.

What is your returns & exchange policy?

Condition: unopened, undamaged tins and pouches can be returned or exchanged within 30 days of delivery. For food-safety reasons we can't accept opened matcha unless it arrived faulty.

Process: contact us with your order number and we'll arrange a return or replacement.

Damaged in transit: tell us within 48 hours of delivery with a photo and we'll replace it at no cost.
